WHY DO THE CHINESE PEOPLE EAT EVERYTHING THAT MOVES?

I understand that this habit / costume that the Chinese have of eating everything that moves comes from the famine that happened decades ago because of Mao's communist regime, which is said to have killed no less than 45M people. In China, as in all communist countries, with the excuse of ending the rich / capitalists, those who end up suffering the most are the weakest and most vulnerable, the lower class.
Well, these people became so hungry back then that they would put the first thing they saw move into their mouths, and hence it is not culturally strange to eat all kinds of animals that, for example in the Western societes, we consider unfit for consumption due to whatever circumstances.
Pacific Geoduck. Have you heard of this? Well, it is a large mollusk that can reach 1 meter in length. It can be eaten. It's a bit upsetting to see someone eating it. It actually hurts.
